- 2 tbsp fresh parsley or coriander leaves, chopped
- 1 tsp garam masala powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp red chili powder (optional)
- 1/2 tsp turmeric powder
- 2 tbsp breadcrumbs (optional, for binding)
- Salt to taste
- Oil for frying
For the Gravy:
- 2 medium onions, finely chopped
- 2 tomatoes, pureed
- 1/2 cup plain yogurt, whisked
- 1 tbsp ginger-garlic paste
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp garam masala powder
- 1/2 tsp red chili powder
- Salt to taste
- 2-3 tbsp oil
- Fresh coriander or parsley leaves for garnish
Instructions:
Preparing the Koftas:
- Mix the Ingredients: In a large bowl, combine minced beef with chopped onion, garlic, ginger, green chilies, fresh parsley (or coriander), garam masala, cumin, coriander powder, red chili powder, turmeric, breadcrumbs (if using), and salt. Mix until well combined.
- Shape the Koftas: Take small portions of the mixture and shape them into round balls or oblong shapes (about the size of a golf ball). Set aside on a plate.
- Fry the Koftas: Heat oil in a frying pan over medium heat. Once hot, add the koftas in batches. Fry until they are golden brown on all sides. Remove and drain on paper towels. Set aside.
Making the Gravy:
- Sauté the Onions: In a large pan, heat oil over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until they turn golden brown.
- Add Ginger-Garlic Paste: Stir in the ginger-garlic paste and cook for another 2 minutes until the raw smell disappears.
- Cook the Tomatoes: Add the pureed tomatoes and cook until the oil starts to separate from the mixture.
- Spice it Up: Add turmeric, ground coriander, ground cumin, red chili powder, and salt. Cook for a minute until the spices are well blended.
- Add Yogurt: Lower the heat and slowly stir in the whisked yogurt. Cook for 5 minutes, stirring frequently, until the gravy thickens and the yogurt is fully incorporated.
- Simmer the Koftas: Add the fried koftas to the gravy. Gently coat them with the sauce and let it simmer on low heat for 10-15 minutes, allowing the flavors to meld together.
- Final Touch: Sprinkle garam masala on top and garnish with fresh parsley or coriander leaves.
