For the Sauce:
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 tomatoes, finely chopped or pureed
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/2 teaspoon garam masala
- 1/2 cup plain yogurt (or coconut milk for a dairy-free version)
- 1/4 cup fresh cream (optional, for a richer sauce)
- 1/4 cup fresh cilantro, chopped, for garnish
- Salt and pepper to taste
Instructions:
- Prepare the Chicken Kofta:
- In a large mixing bowl, combine the ground chicken, onion, garlic, ginger, green chili, cilantro, parsley, breadcrumbs, egg, and all the spices (cumin, coriander, turmeric, paprika, garam masala, salt, and pepper).
- Mix everything thoroughly with your hands until well combined. If the mixture feels too wet, you can add a bit more breadcrumbs.
- Wet your hands to prevent sticking, then form the mixture into small, golf ball-sized koftas (about 12-15 pieces).
- Heat the olive oil in a large skillet over medium heat. Once hot, add the koftas in batches, cooking them until golden brown on all sides, about 4-5 minutes per side. Once cooked, remove from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add a little more oil if needed. Add the chopped onion and sauté until golden brown and caramelized.
- Add the garlic and ginger, cooking for another 1-2 minutes until fragrant.
- Stir in the ground cumin, coriander, turmeric, and paprika. Cook the spices for a minute to release their flavors.
- Add the chopped or pureed tomatoes, cooking until the tomatoes break down and the mixture becomes a thick paste.
- Stir in the yogurt and cream (if using), then simmer the sauce on low heat for about 5 minutes. Season with salt and pepper to taste.
- Gently add the cooked koftas into the sauce, making sure they’re well-coated. Simmer for another 10 minutes, allowing the koftas to absorb the flavors of the sauce.
- Serve:
- Garnish with fresh cilantro.
- Serve hot with basmati rice, naan, or flatbreads, and a side of cucumber raita or a fresh salad.
