1 medium onion (finely chopped)
- 3 cloves garlic minced
- 2 medium carrots (peeled and sliced into thin rounds)
- 2 celery stalks (sliced)
- 1 bay leaf
- 1 tsp dried thyme (or 2 tsp fresh)
- 1 tsp dried parsley (or 2 tsp fresh)
- 1/2 tsp turmeric (optional, for a golden color and added health benefits)
- 8 cups chicken broth (preferably homemade or low-sodium)
- 2 boneless, skinless chicken breasts (or 3-4 thighs for more flavor)
- 1 cup egg noodles (or any pasta of your choice)
- Salt and freshly ground pepper (to taste)
- Juice of 1/2 lemon (optional, for brightness)
- Fresh parsley or cilantro (chopped, for garnish)
Instructions:
- Sauté the aromatics: Heat the olive oil (or butter) in a large pot over medium heat. Add the chopped onion, garlic, carrots, and celery. Cook until the vegetables soften and become fragrant, about 5-7 minutes. Stir frequently so the garlic doesn’t burn.
- Spice it up: Add the bay leaf, thyme, parsley, and turmeric (if using). Stir for another minute to release the flavors of the herbs and spices.
- Add the broth & chicken: Pour in the chicken broth and add the chicken breasts or thighs to the pot. Bring to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes until the chicken is cooked through and tender.
- Cook the noodles: Remove the chicken from the pot and set it aside to cool slightly. Meanwhile, add the noodles to the pot and cook according to package instructions (usually around 6-8 minutes).
- Shred the chicken: While the noodles are cooking, shred the chicken using two forks or chop it into bite-sized pieces. Add it back to the pot once the noodles are tender

- Season & finish: Taste the soup and season with salt, pepper, and a squeeze of fresh lemon juice for added brightness (optional). Let the soup simmer for an additional 2-3 minutes to let all the flavors meld together.
- Garnish & serve: Ladle the soup into bowls, garnish with fresh parsley or cilantro, and enjoy the warmth of a classic homemade chicken soup!
Tips:
- For extra richness, you can add a splash of cream or coconut milk before serving.
- For a thicker soup, mix 1 tablespoon of cornstarch with a little cold water and stir it into the broth during the last few minutes of cooking.
