Air Fryer Honey Glazed Carrots

Whole carrots roasted plain until the Wrinkle Effect appears,then finished with a Mike's Hot Honey and Kerrygold butter glaze in the air fryer for a perfect caramelized crust. The two-stage method guarantees deep amber glaze every time — 25 minutes total.

Ingredients
  

Main
  • 1.5 lbs whole carrots peeled and cut diagonally
Honey Glaze
  • 3 tbsp raw honey Mike's Hot Honey or Nature Nate's
  • 2 tbsp Kerrygold unsalted butter melted
  • 1 light spray Chosen Foods avocado oil spray
  • 3/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp garlic powder
Finishing
  • 1 tbsp fresh thyme leaves
  • 1 small pinch Maldon flaky sea salt
  • 1 tsp fresh lemon juice
  • 1/4 tsp crushed red pepper flakes optional

Equipment

  • 1 Air Fryer (5.8 qt basket-style recommended)
  • 1 Small whisk and mixing bowl for glaze

Method
 

  1. Peel and cut carrots diagonally into 2 to 3 inch pieces, max 3/4 inch thick.
  2. Pat cut carrots completely dry with paper towels.
  3. Spray lightly with avocado oil and toss with salt, pepper, and garlic powder.
  4. Preheat air fryer to 400°F for 3 minutes with empty basket.
  5. Place carrots in a single layer in preheated basket with no overlapping.
  6. Air fry at 400°F for 10 minutes, shaking basket once at 5 minutes.
  7. Check for the Wrinkle Effect — surface should look matte and slightly tightened.
  8. Whisk melted Kerrygold butter and raw honey together until smooth and glossy.
  9. Pour honey butter glaze over carrots in basket and toss quickly to coat.
  10. Return basket and cook at 380°F for 8 to 10 minutes until deep amber.
  11. Check at 8 minutes — glaze should be glossy and caramelized with darkened edges.
  12. Remove from air fryer and plate immediately.
  13. Squeeze 1 tsp fresh lemon juice over hot carrots.
  14. Scatter fresh thyme leaves over the glazed carrots.
  15. Finish with a pinch of Maldon flaky sea salt and serve immediately.

Always roast plain first — never add honey to raw carrots.
