Ingredients
  

Base Flatbread
  • 1 cup 240g full-fat cottage cheese (4% milkfat — Good Culture recommended)
  • 2 large eggs room temperature
  • ¼ tsp 1g kosher salt
  • ¼ tsp 0.5g garlic powder
  • ½ tsp 2g baking powder (optional, for extra lift)
Topping
  • 1 tbsp 8g Everything But The Bagel seasoning (Trader Joe's or similar)
  • Cooking spray for greasing baking surface
Optional Seasoning Variations
  • Italian: 1 tsp dried oregano + 1 tsp dried basil + 2 tbsp grated Parmesan
  • Spicy: ½ tsp red pepper flakes + ½ tsp smoked paprika + ¼ tsp cumin
  • Sweet: ½ tsp vanilla extract + 1 tsp cinnamon omit garlic powder and salt

Equipment

  • 1 Oven
  • 1 Large baking sheet (13x18 inch / 33x46 cm)
  • 1 Silicone baking mat (Silpat or Amazon Basics) OR parchment paper
  • 1 High-speed blender (Vitamix, NutriBullet, or Ninja)
  • 1 Silicone spatula or spoon (for spreading batter)
  • 1 Cooking spray (if using parchment paper)
  • 1 Thin metal spatula (for removing flatbread)
  • 1 Wire cooling rack
  • 1 Cutting board
  • 1 Measuring cups and spoons

Method
 

  1. Preheat oven to 365°F (185°C).
  2. Line large baking sheet with silicone baking mat (preferred) or parchment paper. If using parchment, lightly spray with cooking spray to prevent sticking.
  3. Add 1 cup full-fat cottage cheese, 2 room-temperature eggs, ¼ tsp kosher salt, ¼ tsp garlic powder, and ½ tsp baking powder (if using) to high-speed blender.
  4. Blend on HIGH speed for 60 to 90 seconds until completely smooth, homogenous, and slightly frothy on top. No visible cottage cheese curds should remain. The batter should look pale yellow and airy.
  5. Pour blended batter onto center of prepared baking surface. Using silicone spatula or back of spoon, spread into circular shape approximately 8–9 inches in diameter and about ¼ inch thick. Do not spread too thin (cracker texture) or too thick (raw center).
  6. Sprinkle Everything But The Bagel seasoning evenly over entire surface. Gently press seasonings into batter with fingertips so they adhere.
  7. Transfer baking sheet to preheated oven. Bake for 28 to 32 minutes until edges are golden-brown and center is set and no longer jiggly. Center should feel firm when pressed gently with finger.
  8. Remove from oven and let cool on baking surface for exactly 5 minutes. This allows structure to fully set.
  9. Using thin spatula, carefully lift flatbread off silicone mat and transfer to wire cooling rack or cutting board. Should release cleanly without sticking.
  10. Slice into wedges, fold in half for wraps, or use whole as a base for toppings. Serve immediately or store as directed below.

Notes

High-Speed Blending is Essential: This is the most critical step. Blending at high speed for 60–90 seconds incorporates air bubbles that create the bread-like texture. Low-speed blending or hand-mixing produces dense, rubbery results.
Cottage Cheese Type Matters: Use 4% (full-fat) or 2% (low-fat) cottage cheese only. Fat-free cottage cheese produces dry, rubbery texture. Good Culture brand recommended for best results.
Room Temperature Eggs: Cold eggs do not blend as smoothly and can create uneven texture. Let eggs sit at room temp 20–30 minutes before blending.
Silicone Mat vs. Parchment: Silicone mats produce more even browning and easier release. If using parchment paper, grease lightly with cooking spray to prevent sticking.
Thickness Matters: Spread batter about ¼ inch thick. Too thin = cracker-like. Too thick = raw center.
Don't Overbake: Once edges are golden and center is set, remove immediately. Overbaking creates dry, cracker-like texture.
Storage: Store unfilled flatbreads in airtight container in refrigerator for up to 5 days, or freeze up to 2 months. Place parchment between layers to prevent sticking. Reheat in toaster oven at 350°F for 3–4 minutes to restore crispness.
Serving Suggestions: Top with cream cheese + smoked salmon, avocado + tomatoes, peanut butter + banana, or use as a wrap for grilled chicken and vegetables.
